Super yummy and very easy
Feb. 9th, 2006 12:57 pmOne of my favorite restraunt desserts are those molten centered chocolate cakes. They are so very yummy and rarely make me sick. Yesterday I had a serious craving for one so I looked the recipe up on Epicurious and discovered that the reason they don't make me sick is because they don't have any flour in them. Here's the one I made today for lunch dessert, CHOCOLATE LAVA CAKES WITH COFFEE CUSTARD SAUCE. I made a half batch and I was surprised at how simple they were to make, nothing scary at all.
Changes:
I melted the butter and chocolate in the microwave instead of a double boiler. It takes multiple zaps, but its a lot less messy. First zap of 15 seconds, stir, second zap 25 seconds and let rest in the microwave for 2-3 mins, stir until smooth. Also, instead of flouring the cups I sugared them. The recipe says to let it rest for 1 min after baking and then to turn out. 1 minute is too soon for the cake to come out whole, it sort of mushes all over the plate, but its still yummy. 5 mins would probably be ideal.
The richness of this dessert depends on the quality of the chocolate. I used a 53% cocoa solids chocolate, and it was quite rich. Whipped cream and berries would be a great accompianment
