I also highly recommend reading the translated sections of Textiler Hausrat in the German Ren Costuming group files. There also is some really good stuff in the mailing list archives about fitting this style of pants.

Wool, though, does seem to be the favored fabric for this style as it can be slashed and not fray, but there are records of period stripped hose of red wool and white silk satin.
