The first turkey I cooked by myself was for lunch at an SCA event. I had been advised that if one cooks a turkey at a very low temp for many hours (just hot enough to kill the buggies) it will be very tender and also you can do it overnight. Well, I tried it. And woke up in the morning to a flat turkey. Magnificent flavor. Melt-in-your-mouth tender. But the cartilege had all melted, and it fell down flat.

Not what I had been planning, but ohhh, it was good.

My Mom has done this recipe a couple of times, and the turkey is really good.
